Hi Everyone,
I made this absolutely incredible pie on Thanksgiving. Basically, I just "borrowed" ideas from other recipes and threw this together. My non-raw family LOVED it! (all except for my youngest daughter, who wouldn't try it). I think I'll be converting the crew before too long! Please try this pie, your taste buds will thank you!
ALLISON'S COCONUT-BANANA CREAM PIE
Ingredients:
pie crust: 1 cup figs & 1 cup almonds ground to a coarse meal in food processor. Press this "dough" onto a lightly oiled pie plate.
Next, blend about 1 cup coconut meat, a handful of pitted dates, a teaspoon of vanilla extract, and enough coconut milk to make a nice, thick "pudding-y" conglomeration in your food processor. Next, pour coconut mixture into pie plate and top with sliced bananas.
p.s. confession: I did a VERY bad thing on Thanksgiving and topped the whole thing with cool-whip. Bad, right? I promise next time to make some "raw" whipped cream.
p.p.s. Go light on my punishment; I'm 'transitioning". (LOL).
