View Full Version : Pad Thai--yellow squash substitution?

I want to make the Pad Thai recipe in Alissa's book for dinner tonight and I do not have yellow squash. I do have four beatiful butternut squashes and was hoping this would be a good substitute. Anyone tried this? If this is not a good sub.--any ideas to use the butternut squashes would be most welcome.

I LOVE making butternut squash soup! It consists of
1 1/2 - 2 C butternut squash
1/2 - 1 mango
juice from 1 big orange
maybe a date or 2
warm water, to consistency
chopped cilantro and red onion for garnish
Whirl everything (except the garnishes) in the Vitamix for about a minute. Should be nice and warm thanks to warm water!

Yellow squash and zucchini are very similar. I think the yellow is a little more mellow. I think the butternut would be too firm, but others may have a different opinion. Yellow squash is a "summer" squash and butternut is a "winter" squash. I prefer the softer types in my pad thai. Hope that helps!

Each tiime I've ever made the Pad Thai I only had zucchini on hand and it worked wonderfully! I usually slice mine with the veggie peeler though (the way she has you do it for the Fettuchini recipe) as opposed to spiralizing as I don't want the "noodles" to be too thin or get too mushed out.
I've never used butternut squash, so I can't give you an answer as to how it would work. But I'm kinda of the mind that it doesn't matter what you use for the "noodles" as long as the sauce is good (this goes for marinara as well as Pad Thai) and her Pad Thai sauce IS very good IMHO!

Thank you all for the information. I stopped and got some organic yellow squash and made the Pad Thai t (I always make half the recipe since it is just me and to make sure I will like it so as not to waste. It was not something I would normally have made even cooked, but it was pretty good--I ate the entire plateful. I'm really liking this raw eating!
mangoagogo--I'm looking forward to using my winter squash for the soup. Sounds yummy!
