Anyone have any suggestions for mock pita bread?

Hi Samuel--
I have a recipe from Uncooking with Jameth and Kim:
2 1/2 cups raw sprouted flour [made from sprouting, dehydrating, & smashing grain--buckwheat is gluten-free and technically a fruit]
1/2 cup purified water
1/2 avocado
[abridged directions]:
Mix ingredients by hand; roll out dough in a flat circle, and slice in half; these are the two sides of your pita. With fingers (or whatever) press the round edges of the halves together, sprinkling extra flour inside to keep the sides from sticking together. Put something inside to keep the sides apart [they recommend "fruit pits"--I think avocado pits would work well] and dehydrate at 110 for 5-6 hours. If it comes out too hard, use moist fillings.
I haven't tried this, and it seems like 2 1/2 cups of flour would make a really large pita, so let us know if you try it.
Or maybe a variation of the onion bread recipe would work?

No, I have not made it yet. I am afraid that if I make the raw mock pita bread that I might be tempted to start eating a lot of bread. I have been eating a lot of my sweet spicy gazpacho soups lately.
