I want to make the sweet potatoe souffle for thanksgiving and am wondering if I can use yams instead. Anyone have any experience substituting? What do you think?

I would think you could easily, substitute one for the other.
I personally like the yam chips much better than the sweet potato chips that my hubby makes.
he doesn't soak them, although maybe next time he will try that.
But I've heard it takes out the starchy raw taste if you soak in cold water for a couple hours prior to using them, (after grating or shredding or slicing)

you can substitute. but honestly, in this country, most things labeled "yams" are not truly yams. people just use different names for the same veggie. now, there really is a difference, botanically, but true yams are rarely available here.

wow, Krista, I didn't know that.
I like the dark orange ones in the grocery store, but don't care for the yellow ones.
Are these not yams? as labeled?
