Thought it would be cool to start a Thanksgiving Photo thread.

Here is my Thanksgiving food from a couple of years ago...there was Juliano's Torte garnished with strawberries and on the plate...cranberry sauce, mock turkey loaf, marinated greens and sweet potato pie. The pie needs work and tweaking but I'm working on it! It was okay...but used too much psyllium trying to make it firm and sliceable so it was kinda slimy in texture..but the look and the flavor was pretty good.

Thank you. It was on the heavy salty side but it wasn't the recipe, it was me. I think I added some dark miso to it that maybe it didn't call for (can't remember the exact ingredients).

However I rolled up the leftovers into little balls and dehydrated and they made excellent meatballs!

Rawkinlocs your plate looks awesome. It looks so much nicer than the piles of food with absolutely no plate showing through!

Did you dehydrate the noasted turkey to get it dark on the outside? It seems to have sliced very nicely.

Wow, it all looks so Great! I am going to have to seriously think about what to fix on Thanksgiving Day! It will be just my husband and I and my husband is a Gold Member to the SAD Dining Club! So having that much Noasted Turkey for my self is a bit intimidating. Any suggestions?

I did use my dehydrator for the first time to make Butternut Squash Patties. Not sure if it turned out. The patties were soft in the center and when I put them in a tupperware they got even more, soft like. Is that the way raw food is when using the dehydrator? Just curious!!

Sharon: I am too interested in your Butternut Squash Pie recipe as I propbably won't be making the patties anytime soon and I just so happen to have an extra Butternut Sqush laying around. Can you eat Butternut Squash raw?

I was thinking of making the Noasted Turkey this year...but then after reading the recipe see it calls for white miso and I don't have any, nor does our local co-op...so, looks like it'll be Mock Turkey Loaf but that's fine as I like it.

Mandarin, there is a marinated greens recipe in Alissa's book...I "kinda" followed it, but then kinda went on my own by adding chopped onions, red bell peppers and other seasonings. I also used collard greens but the recipe in the book calls for kale...you could do either or even both!

Thanks again girls. I will search around for the butternut squash pie recipe. I did 2 raw and a cooked pie and I ended up eating the bad one, lol. So this year I'm not going to do any pies, but maybe do a brownie or fudge or something like that.

There was a whole slew of Thanksgiving Recipes here last year. I may have picked it up from here.

Arianna it may have gotten dark from the miso I used. Kind of funny it came out looking all cooked like that.

Rawzoni the Noasted Turkey was actually fairly small (those were cranberries surrounding it and it was on a small oblong plate). You could half the recipe if you want.

My friend made the Mock Turkey loaf and it was good (I thought in some ways better than the Noasted one), but she made it too many times for the both of us - this year I'm just going to stick with a salad and the cranberry sauce!

Thanks Rawkinlocs - yes the cooked stuff didn't look particularly appealing, did it?

I really liked the courses I created. It gave us time to relax, enjoy and digest the meal. Usually it's a "pile all you can on the plate" including the salad. I may start with a little raw cream of mushroom soup this time around, too (maybe make strawberry soup for the kids or something). Then do the salad and I'll eat my cranberry sauce while everyone else crams down their turkey dinner.

Thank you both for posting those yummy recipes! It all looks mouthwateringly delicious! I really enjoyed looking at them. I'm still keeping things pretty simple, but I can certainly appreciate the hard work that both of you put into those dishes!

Okay, who'd house can I come to for Thanksgiving? :)

Well, here is our Thanksgiving feast, I must say we spent so much time nibbling, we ate hardly anything when we actually sat down to eat.

so, in order of appearance,

Stuffed kalamata olives, with white onion and red pepper, on marinated mint leaves with white onion and red pepper garnish

Waldorf Salad, Fuji and Gala Apples, marinated in lemon juice, with celery and walnuts, and fresh cranberries on top, in a cashew/date/lemon cream, mine is on the left with no rasins, Dragggon's is on the right with raisins, and garnish is chocolate mint leaves.

Pate's, from left to right, Pecan sausage pate', Sage crouquettes with cayenne, neatloaf burgers, pecan/carrrot pate', almond/tahini pate', pecan/mushroom pate' and orange glazed almond pate'- garnish is fresh sage and rosemary, with fresh cranberries in the center

Nut and candy platter, from left to right, cashews, cacoa nibs, cantaloup/lemon fruit leather, pine nuts, strawberry/chocolate mint fruit leather, pecans, macademias, walnuts, apricot kernels, blackberry fruit leather, brazil nuts, almonds, and in the center, 1 lonely piece of freezer fudge (because we ate it all, making this plate, and I told Dragggon we needed at least ONE to photograph) and some walnut/date truffles, garnish is fresh kentucky mint leaves.

Fruit leather platter, cantaloup/lemon fruit leather, blackberry fruit leather, strawberry/chocolate mint fruit leather, and garnish is fresh mint leaves and flowers, with a gorgeous fresh ripe raw delicious gala apple

Close up of the nut tray, to show cacao nibs (bottom right corner) in case anyone hasn't seen them yet, I don't care for them, but Dragggon loves them, so now we MUST have them.

Fiesta corn, is fresh corn kernels, with red pepper and white onion, garnish is fresh sage

Bread platter, from left to right, the ever popular and famous Onion bread, flax seed crackers with sunflower seeds and cilantro, pizza wraps, and flax seed crackers with sunflower seeds, carrot and orange, garnish is fresh rosemary, fresh sage, and fresh cranberries in the center.

Fresh fruit platter, Satsuma mandarin oranges, fuji apple, gala apple, kiwi, cranberries, pecans, and garnish is fresh kentucky mint.

The three "appetizer platters" fruit, nuts and breads

Date platter, fresh dates stuffed with pecan, almonds, walnut, pine nuts, macademia nuts, cacao nibs, and cashews, served on a platter of fresh kentucky mint leaves, and garnished with fresh cranberries.

Spiced almonds, almonds marinated in mexican seasoning, and served on a platter of fresh kentucky mint leaves and garnished with fresh cranberries.

Well, that was our Thanksgiving feast, we had so much fun making all this stuff. Of course with just the two of us, we thought we were making only a few things, but it turned out to be waaaayyyyy more than we will probably eat in the entire next week, but we do love to freeze things.

We also expected to make a bunch of sauces, but everything was so good all by itself, or with the fresh herb leaves, that we decided to not make any sauces this time, except for the marinades and the waldorf salad.

we also made fresh orange juice and limeaid, which we forgot to photograph.

We just moved my old butcher block back into the kitchen, Dragggon moved the marble and cast iron pub table with the two cute little chairs out for me, and my butcher block back into the kitchen, because I thought it would better suit us in their than in our garage, when I remodled the kitchen and took out a bunch of space a couple of years ago, to use as a formal foyer, we had to sacrafice the butcher block area, so I had Dragggon, take off the top 1/8" of grime from the garage, (dust and such) and now it is in the center of our kitchen, so much more useful than our cute little table.

Those look so good! And you're right, I've not seen any dead food picture look so yummy! It was not Thanksgiving in Canada, but last night the family had something cooked, with a generous helping of (dehydrated of course) Carrot Pecan burgers, and cut up vegetables.

What kind of mint leaves were under the olives? I've never seen that kind.

All that just for the two of yas? Gosh, I'd be good on the corn and fruit platters alone. I've notice too, that when go around nibbling during prep I don't even want to have at the food.

I got a lot of indigestion from bad food combining myself. I think too, because the desserts were so nut-heavy. I'm going to try and get my photos uploaded and get them on here too.

Sharon, those are Kentucky mint leaves under most things, we only had a few greens left

sage
rosemary

I think that was it.

The kentucky mint has the larger spikey leaves, where the chocolate mint is smaller, shinier leaves with dark purplish brown underside, and they curl, the Kentucky mint, is flatish, and really easy to lay flat on a plate, they are usually pale green, but in the winter time they get darker green like baby Christmas trees, we often use them for festive garnishes on the side, plus they smell and taste so nice. mmmmmmm

Yep, we were so full after all this food prep, that we just ate a couple of things sitting down, but that's okay, as we love to nibble, that's how we usually eat anyway.

Dragggon will make me a platter of fruit and nuts and usually he's eaten so much during the food prep that I'm the only one eating, so this time we both got to nibble and taste, and had all this cool stuff to photograph.

Autumn, I would LOVE to see your pics, I bet they are great.

I really enjoy seeing everyones pictures and seeing what they ate, and how they prepared the foods.

Ok. Here's my food. Pictured: dressing, cranberry sauce, waldorf salad and coconut macaroons. Not pictured: fruit plate and a veggie plate.

Everything was so yummy and the dressing was really surprising because it tasted/smelled just like cooked dressing. The cranberry sauce was good though I wish it had turned out a bit chunkier.

You've just had the HEALTHIEST cake you've ever had, IT's RAW and you LOVE it ! So HA ! "

Ha, ha, ha...I was laughing so hard when he said he was telling me this. He's serious though, that's what he wants to do. :p

Some of the ingredients I don't think I'd be able to find (probably could order online, though) but just wondering what YOU did and if you got all the original ingredients or if you improvised on some things.

The 1st Cake is: Chocolate Mouse Cake from the link I gave in my prior post.

I bought my raw macadamia nut butter from Whole Foods (probably not really raw as I have been reading about it) .

I bought my cacao butter on line. It was a tad expensive, but worth it.

I'm telling you that cake tastes like it was from the cheese cake factory restaurant.

Angelina, yes, that cheesecake is the one that's been floating around here. I made half a recipe in a small springform pan.

Truthseeker, where did you find your cacao butter? I checked NFL and it looked quite pricey, is there another supplier out there? I wonder if it would matter much to make a substitution?

I'll have to check back with Vitamin Cottage which seems to carry almost everything.

Maybe substitute the cacao butter with 1/4C coconut butter blended with powdered cacao?
The only place I can find that sells cacao butter is rawfood.com and it's $30/lb I think.

Yes NFL is where I purchase my cacao butter. My mother made the cheese cake pictured in my post. She got her recipe from a friend, who also posts here, so I'd say this one is also the same one your asking about.

Ya Rawkinlocs, I did follow the recipe to the EXACT LETTER...I'm a very detailed person.

Oh and ya...and the brown leaf plates are from Pottery Barn (they were on sale, the nature lover in my could NOT say no) And the white one I got from Wal-Mart for something like $2.00

I'm planning a whole kitchen design around them ;)

That looks yummy. Can't wait to see what the sweet potato pie recipe is, when the book comes out.

I posted my thanksgiving pictures at another forum and some people were saying it did not look right - like it just sat there on the plate, in globs. a couple people even said it looked like puke. ha. of course this was my first time making all this stuff so I guess it could've been a little more presentable, but it tasted great.

Yeah, I sometimes get that reaction from my kids (mainly my son)...he'll look at something I make and then make his eyes get big and then he starts making that "scary movie, shower scene" music :rolleyes:

Great photos Cherie, everything looks divine. Glad you got that sweet potato pie to work out for you. The crust looks really good too. And the mock turkey looks very yummy with all the veggies in it. Much more attractive than the other way I've seen it made.

This probably should go into a new Christmas food photo thread...but this seemed the best place for now.

Made this very simple "wreath" for a Christmas brunch at my church today. I received lots of compliments on it...and it's just broccoli, grape tomatoes and onion dip in the middle (with strips of red pepper for extra pretty).

My first creation worthy enough for a photo :)

Thanks, Jenna. It's a lazy susan with three seperate "bowls" around the dip bowl. I just started sticking the broccoli into the bowls and piled them up. I put tomatoes in the bottom layers too, so it would still be pretty as the top layers were picked off. I think you could do the same thing with any large round platter though.

Scrapdog, how clever,and how festive and pretty too, I'm gonna' borrow that idea for a coming up event. I'll give you the credit though :)

Jenna, your food does not look like puke, puke isn't near as colorful. :) LOL

of course, when people say that you can always just say "Thank you" and see how they react, they won't be sure you heard them right, or they'll think your are really weird and strange, which I personally feel is a GOOD thing. :)

Everything looks wonderful. I can't believe how close it looks to your mother's plate. I can hardly tell the difference in the photo. I'm assuming in real life it was a lot more colorful, though!

Note - Cacao powder and cocoa powder are the same darn thing.

I just purchased some Dagoba organic Cacao powder, very pricey, in a pretty can from Whole Foods; And also a super-affordable bag of bulk organic Cocoa powder from Vitamin Cottage.

I put them side-by-side (thinking Dagoba was going to be superior or something), smelled them, tasted them (it is an unsweetened powder, I just licked a little), I couldn't tell the difference, or if any one was better than the other. They really tasted the same.

Just goes to show don't judge a book by it's cover.

Also Cacao is just a fancy, exotic name for cocoa. It's the same thing. I kind of knew that in the back of my mind, but I was open to the fact that maybe cacao wasn't as refined as cocoa. But they are the same.

I'd like to read differing opinions, as I'm open to them, but personal experience has settled my own mind at this point.

that chocolate mousse cake looks fantastic. i'd love to make it, but half of the ingredients i'd only be able to get online.

I checked out that chocolate mousse cake recipe. It calls for 2 CUPS of young coconut meat. If they're all like the one I opened, I would have to pound open at least 12 coconuts to get that much! It took me half an hour to do just one!

How can anyone do that?

I'm intrigued by the onion bread recipe. Where can I find that one?

Also, I'm going to make the flax crackers, but I've read that some of you didn't like it very well. Are there some tips for making it better?

Hi Jan,

This is the onion bread recipe:

2 1/2 lbs sweet onions, peeled
1 cup ground sunflower seeds
1 cup ground golden flax seeds
1/2 cup olive oil
3 oz. Nama Shoyu

Put onions in food processor and process until small pieces, not mush though.
Put in mixing bowl with the other ingredients and mix thoroughly. The flax will absorb the liquid. Smooth onto teflex sheets about 1/4" thick and place in dehydrator for 5 hours, turning over for another 3-4 hours or until dry and crispy. Either break into pieces or cut with a pizza cutter, and store in frig. in an airtight container.

Hi Jan,
I just made that cake for my birthday and I didn't have any young coconuts, so I used the meat from (ahem) more mature coconuts. :D

I soaked the flaked coconut meat overnight in water, figuring that might soften it some. I used my brand new Vitamix Professional Series (birthday present!) and I'm not terribly proficient with it, yet. So I don't know if I could have made it creamier.

The coconut did get pretty well ground up but there is just a hint of chewiness. Reminds me of an almond joy candy bar. Incredibly rich.

I'm going to spring it on my (non-raw) parents tomorrow!

Also made chili cheese corn chips using RowanC.'s http://www.rawfoodtalk.com/forum/showthread.php?t=10349 corn chip recipe, to which I added some of Alissa's Nacho Cheese and a healthy sprinkling of chili powder.

Amazing, the tastes that you can come up with!
