View Full Version : Endive Cups with Ragout of Mushrooms and Tamarind Chili Sauce

I had this for dinner tonight so good!

3 cups assorted mushrooms
3 tablespoons green onion
1/4 cup diced red pepper
1/4 thick tamarind juice
2 tablespoons raisin paste (i used agave)
2 tablespoons ginger minced
1.5 teaspoons lime zest
2.5 tablespoons nama shoyu
2 tablespoons olive oil
1 teaspoon celtic sea salt (i left out)
18 small endive leaves

Toss together mushrooms, onions and bell peppers.

Blend or whisk together tamarind, sweetner, ginger, lime zest, nama shoyu, olive oil and sea salt. Mix in with mushrooms marinate for 1 hour.

Place 2 tablespoons into each endive leaf. Can garnish with onion.

Is tamarind a widely available fruit? How did you get the juice? (I'm in NJ, USA.) Thanks!

Hi Raw Yogini,

Yes you should be able to get it at any asian or tropical food store. Just soak the tamarind in a little bit of water to create the sauce don't forget to take out the seeds once soaked.
