Hi all, I wanted to share my great lunch experience with you ! I'll start off by mentioning that I tried a few new recipes this week and was a bit disenchanted. I tried the mock salmon yesterday,I can't handle the heavy nuts and started to feel sick after a few spoonfulls spread on romaine, so I was feeling really down about being able to make it through the holidays ( and winter) and stay Raw :(
We got up this morning I had an e-mail from this great little Raw cafe in Woodstock NY about an hour from home we had visited over the summer.Our day was clear of hockey games and birthday parties so my hubby and I packed up the kids and headed up for the afternoon !

They had a full menu of incredible looking Raw lunch items and desserts !! We tried several things and let our kids eat dessert for lunch :D . I had the best mock tuna and some of my husband sprouted "burger" and dessert WOW ! we had 3 kinds of cake with almond cream, a pumpkin mousse and a bavarian custard, yes all raw and delicous !

I spoke with Barbera the owner for a while (in between customers, it was a busy place), she kindly gave me her mock tuna recipe and few other suggestions, but what a great Raw food rejuvination it was for me and my husband ! We hit the sunflower market on our way out of Woodstock, a great natural foods market that had every ingredient imaginable !

Well, my dehydrator is filled with cookies & mock crab cakes ! I have mock tuna & a new dressing in my fridge for tomorrows lunch.I am so thankfull I went today and have new confidence that I can contnue to do this ! I just have to have faith in my uncooking skills and keep experimenting with different recipes.

Hi mbf,

I'm so happy for you that you and your family had such a nice day! It's good that you have a good raw restaurant so close to where you live. It makes it nice to have somewhere "special" to go once in a while.

My advice would be not to despair about being able to stay completely raw during the winter. I mean, it's a great thing to aspire to, but especially if you haven't been eating raw for very long, it can be tough in the beginning. I myself am not 100% raw, but very high raw on a daily basis. I have found that over the couple of years I've been eating this way, my tastes have naturally gravitated towards raw, rather than cooked, most of the time. I am happy with the way I eat, and all the benefits I have gained through this lifestyle. Of course, this is me and my experience, and it works for me, but if you are striving to be 100% right away, I fully support you in this.

When I first went raw, I didn't think I'd be able to eat alot of "cold" fruit and veggies during the winter. But an interesting thing happened: I found out that I really prefer either cold, or room temperature foods, rather than hot. In fact, now when I do eat something hot, I usually end up burning my mouth! I'm just not used to the heat anymore.

Anyway, I just wanted to respond to your post, and to say I am happy you had a great day.

Raw soups are warm and lovely in the winter. If you realize that a hot tub is 103-104 degrees, then 116-118 (at most) is quite satisfying as the 'warmth' needed for the winter days.

mock crab cakes???? :o Could you pm me the recipe? I'm struggling to maintain raw in the winter too and that sounds delicious!! Please??? :D

Thanks cattzeye, it's making that transition to cold food in cold weather that is tough ! The summer was so easy ! Thanks for the words of encouragement !

Beanie, the recipe should be in your box, I also included the recipe for a red pepper dipping sauce to go with ! enjoy and let me know how you like them !

I sent you the recipe along with a recipe for the a red pepper dipping sauce that is sooo good ! I over dehydrated my first batch, going to try another batch now.

I agree that the mock salmon pate is to much nuts for me. I decided to only use half the amount of nuts, and increase the amount of celery, and now I love this dish! It's light and refreshing, an it's perfect on romaine lettuce leafs.

Oh thank you ! what a wonderful idea, I am still not brave enough to play around with the ingredients. I have a bowl full in the fridge, how do you think it would come out if I threw a bunch more celery in and put it all back in the processor for lunch tomorrow ?

Alright, gotta have this recipe as well for the crab cakes.

And that is just great that you your excitement for raw back.

I know that sometimes just finding a few recipes will do the trick.

Oh, how I wish there was a raw restaurant here close by!

Hi Pam, check your PM box. The raw cafe was like a dream ! I wish it was a little closer, it's an hour drive each way.
I would go and work for free just to learn how she made all those incredible items ! She told me to just keep practicing !

The closest raw restaurant to me is like 4 hours away.

Some weekend we will make a trip there to give it a try!

LOL about working there for free just to learn how to make the food!

Yes, practice is the key. I'm horrible with uncooking, but I'm getting better the more I practice!
