Does anyone know any tips on cutting the salt flavor in sauerkraut?

The best way to cut the salt, is like with olives, or anything else that is too saly, soak it in filtered water for a while, Now the "while" might be 10 minutes to over night. But this should pull out alot of the salts.

would you mind sharing your sauerkraut recipe? I have been looking for one but have not been able to find one yet without animal products in it.
