I wanted to make a sweet potato pie for Thanksgiving, but my Mom is making a cooked pumpkin pie and no one in my family eats raw, so I didn't want to try and make something similar to the cooked foods that everyone is going to be eating. I get tired of hearing "This is okay, but it doesn't taste anything like the 'real' thing."
I have some sweet potatoes and I was hoping to make a sweet potato salad. Just like potato salad but with a sweet flavor. I thought of chopping up the sweet potatoes into cubes and adding some cubed apple and maybe some sweet onion and a little celery. I was then going to take some of sweet potato that was leftover and blend it with some soaked raisins or agave or honey (I'm not sure which would taste better), and make a sort of "sweet mayo " to mix with it. I'm not sure of how to get the sweet potatoes to soften up. Should I make alot of the sweet mayo and marinate it? I want it to be just like potato salad, only sweet. I hope I am making sense. If this sounds disgusting or if there is something else I should add or do differently, please let me know. I am new to this and I don't always know what foods taste good together. :confused: :confused:
