Latkas...would love to get Sharon's recipe she hinted of in another topic.
Any other Jewish recipes you can recall, would be nice teaser.
Ok..I'll guess at the latka ingredients, but don't hold me to it...potatoes, grated onions, paprika, salt, pepper, perhaps flax seeds to bind it or psyllium...put all in dehydrator....top with applesauce? How's that? Alissa got any input?

I posted a similar question recently but am still looking for replies so I'll check in here. Do you think raw potatoes will be edible? tasty? Hard to imagine so I'm trying to come up with other ideas for Chanukah foods. Nice to know there are other Jewish raw foodies out there! Maybe that topic deserves its own thread. Sometimes the raw "movement" feels heavily evangelical to me, which is odd for those of us not motivated by that belief system :) Anyway, I'd love to trade ideas for Chanukah recipes, including desserts. And in that list of raw recipe booklets I recalled seeing one that she sells that is catered to the Passover Seder and it mentions a spinach-potato latka recipe, amongst other recipes, that will be in this particular booklet. The booklets are $10 ea.

Thanks Rawkinlocs! I've never seen this site or heard of Jacki Graff...love being turned on to new raw resources. I think I wrote in a different thread how much I miss my "global flavors" especially Indian food. Can't wait to try Jacki's recipes. I'm also going to order Alissa's book soon. By the way, tried your marinated greens and loved them. My mom tried them too and we both were amazed how finely chopping and marinating the greens makes them so delicious and digestible, even the big sturdy kale and collard greens I used.

Yeah, after Sweetlips shared the info on Jacki, I did a search and found this site with all of her cookbooklets listed! I remembered seeing that Passover one.
I'm glad you liked the greens (you and your mom). Leaving them to marinate for several days...you'd think they were cooked on the stove because they get so tender and yes, much easier to digest...even those tough-guy kale leaves! :D

Hi - I apoligize, I haven't had a chance to experiment. I'm actually having a traditional latke-off with a friend tomorrow (making a huge batch and freezing) and maybe I'll put some shredded potatoes aside and soak in brine and dehydrate to test it out. I wonder if jicama would be more effective...I may try them both.

Spinach and Potato Latkes
Serves 8
* 1 cup macadamia nuts, soaked 8 hours and drained
* 2 cloves garlic, minced
* 2 teaspoons Celtic sea salt
* ½ cup lemon juice, freshly squeezed
* 1 cup Rejuvalac or filtered water
* 1 cup pine nuts, soaked 2 hours and drained
* 6 cups spinach, chopped fine
* 1 onion, chopped fine
* 6 small red potatoes, grated
* 1 teaspoon paprika
1. Place macadamia nuts, garlic, salt, lemon juice and Rejuvelac or water into blender and blend well until mixture is smooth.
2. Add pine nuts to mixture and blend well.
3. Fold the nut mixture into spinach. Add onions and potatoes, stirring well.
4. Drop by spoonfuls on a teflex sheet.
5. Sprinkle paprika on latkes.
6. Dehydrate for 4 hours.

Yes I have made potato salad using raw potatoes. Can't remember the recipe but can did for it if I'm allowed to post a recipe other than Alissa's. Can I Alissa before I start hunting???????

I know your recipes have to be the best as I have read raving reviews and your willingness to share away too. However, as of this moment, due to finances I have not yet bought your awesome book.
Maybe Sharon in CO and myself here too, can get our library to order it. Can they order from your or a distributor as I think I asked them last time for your book and you have to be listed or whatever. Please let me know so I can work on my end. Thanks bunches. Was not intending to offend you in anyway. Off to chiro who has helped tons with frozen shoulder that is finally waking up more and more each day--been a year now!
Not ready for the Wheatgrass yet either. Can't get past the smell even holding nose.

Well I tried the spinach potato latkes and they were quite repulsive. The dog wouldn't even take it. She looked at it, took a whiff and then walked the other way.
I didn't follow the recipe *exactly* but I cut the recipe in half, thanks to hubby who warned me what a waste it would have been with the nuts I used. I didn't use all macs because they are very expensive, I used some cashews for the balance. I also soaked the potatoes in salt water before hand to remove the starch and I used some nutritional yeast, but everything else I did the same. They just came out quite ghastly.

Thanks for the warning Sharon! Last night I made latkes for my family and managed not to eat any...but I was just thinking about trying some of the raw versions this week...however not the spinach recipe! I bought tiny yellow "butter" potatoes today and thought of trying to use them, though the thought of raw potato still repulses me. Maybe I'll just make one or two experimental ones rather than waste all that good raw material. I'll let you know how it turns out!

Yes, I definately would suggest cutting the recipe in halves or quarters. I think the nutritional yeast was a mistake and it was way too lemony for my taste. I was actually thinking of doing another small batch and using shredded carrots instead of the spinach.

I made that recipe using grated jerusalem artichoke instead of potato...they were pretty yummy.
