View Full Version : I made Mock Turkey & Cranberry Sauce

I made Alissa's recipe for Mock Turkey and topped it with the cranberry sauce.
It was really good! The mock turkey was ok, I used almonds instead of cashews and other spices instead of sage (didn't have any)
and it was ok, but with the cranberry sauce on it and WOW !!!
Someone mentioned on this board (I think) that it was the best cranberry sauce they'd ever had......I second that! I didn't know what cranberry sauce was untill tonight!
That stuff in the can is GARBAGE compared to this sauce. I even put some of the left over sauce in a little circle shape and I'm dehydrating it right now, just for a bit, to see what happens.
Only my oldest ate it without complaining, but she still didn't care for it. She LOVED the cranberry sauce though.
On our family 1 to 5 stars scale this is how the mock turkey with cranberry sauce rated:

yeah, it's good. When I made it, it reminded me of stuffing/dressing, soooo..I added other stuff to it that I would have normally added to my dressing in the past like, onions, bell peppers, poultry seasoning. It was very good and you're right, that cranberry sauce is delicious! It was just like having dressing and cranberry sauce like I did with cooked thanksgiving fair.

Since it doesn't go in the dehydrator, does it need to sit a while to start to form up a little bit?
Mine didn't go over real good with my family either. But the cranberry sauce was great :D (Jenna-) The turkey loaf does need to sit a bit to get firm. I ended up using it like a pate and putting it on my flax crackers. It was good that way. But yeah, I've found organic cranberries at one of my favorite stores, so I stocked up to make a bunch more!
I'm curious to find out how the cranberry sauce does in the dehydrator... does it get like fruit leather? Or does it just get a little thicker, so there's no water running off of it?

I made the mock turkey today as well! It is okay - the rest is in the fridge to see if it firms up some.
I don't use honey, so I subbed dates with the cranberries -- and left them a bit chunky. It was pretty good. Next time I will add some apple for more sweetner, or soak the dates first so perhaps I'll get a creamier sauce.
All in all, the whole thing was okay.

I tried the mock turkey loaf this morning for breakfast -- after it had been in the fridge overnight. It firmed up really nice ... and tasted wonderful!!

Ok, here it is ....the clouds part as a beam of sun shines on this gift from the earth....
CRANBERRY SAUCE....ROUNDED AND FIRMED UP somewhat like the canned stuff.
I can't believe how GREAT this is, I put it in the dehydrator for a few hours (about 3 maybe) at 105 , at this point it was as workable, pliable, moveable as the canned gel stuff. Not dry, not hard ....just GREAT !
I'll be serving this FER SURE ! Even to the SAD people in my family (my sister)

COOL! Thanks for the report Truth! Also, one year I made cranberry sauce and had a bit leftover that wasn't getting eaten fast enough...spread it on the dehydrator thin and dried it...made a wonderful cranberry fruit leather!!

I have two recipes...Mock Turkey, and Noasted turkey loaf. The noasted turkey seems to have more spices, which I think would just add more flavor. I haven't made either yet, because I guess I'm afraid of wasting nuts. I think I'll give it a try. I thought the Mock turkey had to go into the dehydrator? Maybe I read the recipe wrong.

Is that the cranberry sauce recipe from Alissa's book?
Someone mentioned dates and honey above but I thought the recipe just had raisins and apples? Just want to make sure I make the same sauce everyone is raving about! :)

I made the Mock Turkey Loaf last night and it was the bomb! It makes me think of SAD chicken salad. Yummy! It would definitely be good as a pate on crackers. The only thing I did different was add a whole onion instead of one scallion. Oh, and salt. But I made my cranberry sauce with four tangerines and 3 apples for sweetness. It is still tart. But I like it. I think one more tangerine would have done the trick. Yummy! I highly recommend the loaf recipe. Would be good on a salad too.

Truthseeker - My friend made this a couple of times and what made it taste good was the sage and poultry seasoning. That is what gave it a sort of poultry-ish taste.

Yes the cranberry sauce is on page 393 in the Mock Turkey Loaf recipe. I cut back a bit on the honey and added a bit of agave just cause I thought the honey taste REALLY came through (I don't care for how honey tastes).

I just made the Mock Turkey Loaf and it is delicious, it would be a great pate and I will also put it on romaine lettuce for a roll-up. I made Miss Hamlin's Cranberry Sauce and oh my is it fabulous! It has apples and raisins in it and I did add some agave to sweeten it even more.
I may be a bit late making this for the holidays but I do know what I am making next year for Thanksgiving!
