View Full Version : my RAW tex-mex lunch pics

I had a raw curious friend over for lunch the other day and here's part of the feast we ate:

raw salsa (my own recipe)
Alissa's enchiladas
Alissa's avocado chutney
and I made a batch of tortilla chips out of the same recipe for the
corn tortilla's and added some pumpkin seeds and dehydrated longer.
(We ate these with the chutney. The chutney is so good and could easily
be brought to a party and be eaten without anyone realizing it was
RAW and good for you ) ;)

All yummy! Even my cooked SAD hubby liked the enchilada's which we
topped with the salsa.
My raw curious friend loved everything. I think we have a convert...actually
I have made several meals for her in the past.
Actually she is in love with the rawnola and BRAZIL NUT Mylk I made for breakfast while we were fixing our lunch. She drank more than half of the mylk herself.
Just thought I'd share :)

Good job, I like the way everything looks. I just got done making some avocado chutney myself (I recognized it immediately in your photo). I used fresh oregano and cilantro this time. It taste much better this way, as compared to using dried seasonings.

I take the chutney and fill romaine lettuce leaves and make living tacos. I sprinkle cumin, celtic salt and mist with nama shoyu to give them a finishing touch.

It was a lot of fun to make all the food. We made the strawberry crepes
too, but didn't take a pic.
We were about to dig in when I decided to take a pic of all this.
My 1st food pic i've posted :p

SamualW--I agree the chutney would be excellant
in romaine leaves or greens as a wrapper. It is so versatile.
My friend actually made the chutney and she did use fresh oregano
and cilantro. I gave her a copy of Alissa's book as a gift...so maybe
she is already converted ;) This is one of the 1st recipes she has made
from Alissa's book and her and her husband loved it.
So she offered to bring it when I said I heard raves about it on the boards.

that's a beautiful spread! I still haven't made the enchiladas or the chutney... I'll have to move that up on my list!

I think the enchiladas are one of the best recipes in the book (the calzone may always be #1, though -- along with the pizza).

The only problem with calzone is the length of time it takes to actually eat from the time you start. It is good, but not something you can make real quick. I stay away from giving people recipes that are time consuming as it tends to discourage them. I lean towards avocado chutney, pesto stuffed mushrooms (not dehydrated), salsa, etc..

I've been wanting to make the Calzone but never have gotten around to
it because it is lengthy, and I have 2 extremely active boys to keep up with. Sounds so yummy though.I've been eyeing it for quite sometime.
I think next time I have my friend over for a raw
lunch we will attempt the calzone. It sounds like a very special meal.
Splitting up the recipe for both of us to do
makes it easier. That's what we did for this lunch.
How many people does the calzone feed easily? 2? 4?

thanks!Be sure to read the recipe thoroughly so you can get a handle on how many days ahead to start it. It isn't hard at all nor is it time consuming. It just needs to be planned ahead. It is very filling and satisfying and four people would be stuffed, especially if they had salad or anything else with it.

Everything looks great!! I've made the enchilada wraps several times but mine look "rougher"......have done them in the food processor.....yours look smoother......wondering what you did??

Aw thanks guys :D We really enjoyed it and it was fun to make.
Everything turned out really good. I have to say though that the
enchiladas definately need some kind of topping. Originally I didn't make
a topping cause I saw the ladies eating them plain on the DVD.
But when I tasted them, I decided to throw some salsa together.
Just gives the dish a little moisture since the tortillas
are chewy and extra flavor.

Sharon, I cut the corn chips up with some kitchen scissors from my knife
set. It cut threw them pretty easy. You might do this when they a solid
but not all the way dry.

GlimR--I used the food processor too.
I pretty much followed the recipe...except I wasn't sure whether or not to defrost the corn 1st or not?!?!? So I left it frozen when I blended them up
and hoped for the best. Perhaps I blended them a bit longer than you did.

These all look soooo fabulous. I just tried to make some mexican type foods, but didn't really like the way it turned out. I like the way your chutney looks, and the enchiladas....well EVERYTHING looks great! I'm off to order Alissa's book....I've been promising myself for weeks.....does anybody have any idea how long it will take to get it? I'm wanting it NOW! :rolleyes:

Thanks for the tip Punky. Now I remember I've done that before, makes a real clean edge. May start doing that with my flax crackers instead of scoring them which tends to make them have rough/uneven edges.

Punky that spread looks fabulous!!! I am making Alissa's enchiladas as we speak. Yesterday I made the chili recipie by Gabriel Cousens I founded posted here. It's funny you mentioned to put something on top of the enchiladas because I was going to use was going to use the left over chili! :D

well on top of them. I haven't made it yet (I must though from all the raves
about it!! Plus it's FINNALLY getting chilly down here in Dallas); but
it sounds like the flavors of the chili and enchiladas would pair quite nicely.

My enchiladas turned out to die for!! They were so goooood! It is definitly one of the best raw dishes I've ever tasted. The family loved them. The chili made them that much better. I think the chili is better the second day because the flavors have a chance to meld together. I served them with a salad. Today I'm going to make curried butternut squash soup and vegewraps...The soup is not one of Alissa's recipes. I must say every one one of Alissa's recipes I've tried are excellent. I can't say I've had the same success with other books. So I hope everything comes out ok. :D

PS. Punky believe me, I'd rather be chilly there in Dallas than her in Chicago! LOL Today it was 17 degrees when I woke up today two degrees higher than yesterday morning! :(

I will definately try the chili and enchiladas together next time; thanks for the idea and recommendation!

LOL, when I mean it's chilly here in Dallas that means it's in the 50's & 60's in the daytime and 30-40's at night.
