I adjusted Alissa's sour cream recipe to stand in for the yogurt the original recipe called for, and it came out great!
In blender mix until smooth:
3/4 cups cashews
1/2 T apple cider vinegar
1/2 t white miso
3/4 cup water
1/4 cup lime juice (about 1 large lime)
1/2 clove crushed garlic
chop and mix in by hand 1/8 cup fresh mint
thinly slice 2 medium cucumbers.
Mix with dressing and chill
add fresh raspberries to taste in individual servings.
I for one was getting tired of using nuts to sub for dairy, but this works out so well, I don't even think about the cashews in it!
