View Full Version : anyone have a good recipe for pickled anything, especially beets?

Hi everybody!
So I have this desire to learn to make saurkraut and pickled things. I have recipes galore for raw saurkraut, but haven't found too many for the pickled things. One of my favorite canned items ever on the SAD is pickled beets, anyone know of a good pickling or fermenting recipe for beets?

I made my own pickled ginger for sushi. I peeled the ginger root with a veggie peeler and marinated it in Plum vinegar and agave. Let it sit a few minutes. Yum.

I have had a jar in the refrigerator with apple cider vinegar, salt, water and honey for at least 6 months now. I pickle any left over veggie. The beets will pickle within a couple of weeks, but they also turn the pickling liquid pink/purple. So all of my other veggies come out an amazing color! Sorry I don't have an exact recipe, but I followed some kind of refrigerator pickle recipe.

Some ice cold crisp pickles do sound good. I think I need to pickle some cucumbers.

Excellent idea! So do you have to pickle the beets in the refrigerator or will it work out on the counter, covered?

Positenrg, I believe that anything with sugar(s), has to be refrigerated while pickling. Beets are high in sugar. However, I am not the expert here. Perhaps someone else could answer?
