Crunchy Taco

3 ripe avocados
1 lg. onion
1/4 cup fresh lemon juice
1/4 cup fresh parsley, chopped
1 1/2 tsp cumin
2 cloves garlic, chopped
1 cup sun dried tomatoes, soaked and chopped
2-3 chopped jalapenos
1 1/2 tsp sea salt
romaine or leaf lettuce

Cut the avocado into chunks, and pour lemon juice over it. Chop onion in food processor, then add the rest of the ingredients and process untill smooth and creamy.
Spoon some of the mixture into a lettuce leaf and wrap around mixture. I promise, this tastes like a taco!
You can add more or less of the jalapenos if you wish, the dish is quite spicy, but VERY good!

That's one version. I'd love to know more. Ones that are quick that I could just put into a lettuce leaf would be great.

Now, with the "1 cup sun dried tomatoes, soaked and chopped" do you think I could just use a fresh tomato? Or do I really need to have a sun dried one?

I make Paul's Pate from Alissa's book and then add that to lettuce leaves. Then I put fresh pico di gallo on top then top that off with some raw pumpkin seeds or pepinos. This is really good.
Give it a try.

I think the sundried tomato gives it more of a taco flavor, but I guess it is not necessary?

Well, you could make Alissa's Enchiladas, but only in rounds,and when you dehydrate them after they are kinda dry, fold them in half, prop them open, and keep dehydrating (they look like the hard shell tacos we've seen in restaurants)

then I just fill with lettuce, chopped white onion, chopped tomatoes, and a burger patty made out of Alissa's meatloaf recipe, with some cayenne and cumin, and then I make some pico de gallo, and some hot salsa and some cashew sour cream, we eat them all the time here, they are delicious.
