Raw Vegan Chips and Salsa

What You'll Need:

~ 1.5 cups of chopped pineapple

~ 1.5 cups of chopped mango

~ 1.5 cups of chopped tomato

~ jicama - peeled and sliced thin

~ green onion and cilantro

~ a lime

~ celery powder

Assemble

~ squeeze the juice of half a lime over your jicama then sprinkle with celery powder

~ add half of your produce, all your green onion and cilantro and the juice of half a lime to a blender or food processor and pulse until mixed well but still chunky

~ add the other half of your produce to the mixture and mix well

~ Serve your salsa along side your jicama chips and ENJOY!!

It's not a huge problem. More of a lifestyle choice though we would like to get solar or wind power - hydro power would make most sense since we are by a river.
