I'm no chef, so take this with a grain of salt :) This is just what I've been experimenting with and it makes adding flavor very easy.
common ingredient - any spices, herbs, chillies you like. e.g. basil, bay leaf, hot chillies, lemon/orange peels. Stalks of cilantro/parsley are good too.
Oils - add to olive oil (or whatever else) and let it sit for a few days.
Salts - mix everything up in a food processor, then add some good sea salt and pulse again. The mixture will be a bit clumpy and wet, spread it out on a tray and let it dry out overnight, and it will dry out into a block. Break it up and store in a jar.
Basil chilli oil over fresh tomatoes sprinkled with lemon salt, bunch of peppery greens, some sliced fennel - so yummy and quick to make.
