I CanÂ’t Believe ItÂ’s Just Cabbage
This salad is super fast, super easy, and super delicious.
1 head white cabbage
1/4 cup olive oil
1/4 cup lemon juice
1 teaspoon salt
1 Tablespoon nutritional yeast

Mix all ingredients in a bowl and decorate with your favorite herb.
Serves 5

I make this all the time as a main meal and usually just eat the entire 5-serving batch myself in one sitting. For some reason, if I let it sit for even a small amount of time it doesn't taste quite as good.
Note: I've only made this with organic green cabbage because I couldn't find white cabbage. This recipe is a winner for me because it is quick and easy with little cleanup.

Thanks Gil! I just got a head of cabbage in my weekly organic produce box, and I was trying to figure out what to do with it... I'm hungry, so I think I'll try this tonight!

(hmmm, I thought I had signed up for Victoria's email :confused: )

Kmik, let me know what happens if you set some aside for awhile; I'm interested if you see the taste difference like I do... I wonder why it tastes so different to me hours after I make it???

Also, I use my hands to mix up the cabbage to get it coated well. Also, you'll need a big bowl

Sorry, I don't think it'll last a couple hours... I had to share it with my daughter :p

I figured out the big bowl part... after I dirtied a littler one :rolleyes: oh well, but it really is pretty good! I've never had much of an affinity for cabbage, but I can eat this no problem!

I love this recipe as well. I agree that if I let it sit, it isn't near as good. Maybe it has something to do with the yeast? I made it once without it and was able to put it in the fridge and eat it a couple hours later and it was lovely.

Pretty presentation there. :D

This is a great recipe and one of my favorites! Actually, I make the "dressing" and thicken it up a bit with some extra nutritional yeast and use this as a veggie dip sometimes! YUM YUM (my dh hates the smell of the dressing though :rolleyes: )
