View Full Version : 8 ears of corn...can anyone help w/ a recipe?

I have 8 ears of corn that need to be used asap.

What would be something good to make with them?

Well, I don't know about 8 ears....

But last night in my salad I put:

2 ears of corn - shaved off the cob
1/4 cabbage - shredded
1/4 cup sliced almonds
1/8 cup pumpkin seeds
1/8 cup sunflower seeds
2 tomatoes - cut into thin wedges

And....well...I used Italian dressing (marinade for 1 hour) which wasn't raw - but you could make a yummy raw dressing for it.

I love this salad and it's high in protein too!

I believe Alissa has a corn chowder recipe in her book.

Maybe use the rest with some chopped up tomatoes, avocados, cilantro
and lime juice...something along those lines and wrap up in some collard
greens or something.

corn chips is a good way to use them up, and they'll keep.

I like raw corn with any combo of the following as a salad... avocado, red bell pepper, olives, garlic, cayenne, tomato and basil (or any green like arugula, baby spinach, cilantro or parsley)

Let me know how these turn out. So far, I've been unsuccessful with Alissa's corn chips.

I would probably just cut the corn off the cob and eat it raw (mono) or put the corn in some guac' or salads.

Didn't Alissa mention the tortilla's work better with frozen corn for some
reason?!!?!
I'v never made them,but thought I read them somewhere.

I actually was going to attempt to make them tonight for the enchiladas
for a raw curious friend. wish me luck.

Yes with frozen corn.

So, I've got to decorn my corn and freeze it.

I am going to make these either tonight or tomorrow.

I make "scrambled corn" take the corn off the cob and add bell peppers, tomatoes, celery, hot peppers, and avacodo. then I season it with spices like mexican, or whatever you like and add a nut mayo
