View Full Version : Mexican Fiesta at church... HELP!!

Our church couples group is having a special "party"....MEXICAN FIESTA!! Complete with music, food, games, hey, we're even doing "the Macarana" (dance). Lots of fun....so you know where this is heading. FOOD. There will be lots of SAD enchiladas, quesadillas, etc. I will be helping Dh make the quesadillas in the kitchen, so I need some easy dishes that I can make before hand (maybe I could even take my dehydrator and have my food heating while we serve everyone else??) I know ya'll have a great enchilada recipe somewhere here (it may be in Alissa's book I am ordering this week, but won't have before Saturday!!) So anyway, any recipe you can offer or tips to help me out will be greatly appreciated!!

Mexican is really easy to impress with raw IMO.

There is a good enchilada recipe in Raw Food Real World. Unfortuantely I loaned the book to my mom right now.

Also, I make a sort of mexican salad, with avocado, fresh corn cut off the cob (you can use frozen kernels from a bag if you prefer), sweet red pepper, green onions, lots of chopped cilantro, a lime juice-hemp dressing, fresh jalapenos, and generous amount of chili powder of your choice (I make my own), Celtic salt and pepper. I serve it heaped over tender lettuce leaves, and total skeptics have loved it.

Of course there's also guacamole with corn chips. Fresh salsa can also be good if you have access to good tomatoes. There's lots of recipes for corn chips out there. Many just sort of involve fresh corn, some flax, some lime juice, cilantro, mexican spices, cayenne. Once I made a recipe that had cashews in the corn chips, they were really good.

Thanks RK. I forgot about this site. There are sooo many recipes there. I'm making chips and salsa, refried beans, rawcamole, YUMMY! Can't wait!

Sorry exurb, missed your post. Yes, I found a recipe for Mexi chips, it looked fantastic. I'm gonna keep it simple, and visually appealing, so everyone around me will want to try some of what I have! :D

Don't forget those yummy jalepeno poppers! LOL, I think these have turned me into a spicy monster! (more than I already was!)
