Hi,
I got a large amount of garlic, about 4 different kinds. I also may be getting my hands on another 1-2 varieties. I planted a bunch of cloves and got a bunch left over to eat. What are some good raw recipes that utilize garlic?

If you want to store it you can peel and crush it and put in a jar and cover with olive oil. If you add some chilly pepper as well it will be really nice. You can use it as you need it.

You can plait the bulbs into a "string", store in a cool, light, airy place and use as necessary. This works if you still have the tops attached. Use to flavour bottles of oils, adding herbs and or chillies, look up raw chilli recipes and add plenty garlic to it. Slice thinly and dehydrate until thoroughly dry then grind with salt for garlic salt or grind without salt for garlic powder. Hang by doors and windows to ward off vampires ;)

Cool thanks for the ideas. 3 of the 4 garlic are pretty strong eaten raw, but the 4th (Chesnok Red), is not so bad and actually has a good interesting taste to it. It is my favorite out of the bunch. So If I add some garlic to a bottle and fill with oil how long would this store for? Probably will make garlic powder too.

My favorite dressing, created by my father:
lemon juice
olive oil, same amount as lemon juice
stone ground mustard, about a 1/2 tsp.
salt
lots of garlic. I mince up 6-8 cloves in a batch with 1/2 c. lemon juice to 1/2 c. oil. If people around me are getting sick, I increase it beyond that. the lemon juice marinates it so it doesn't taste so pungent.
