so i found this recipe for corn tortilla chips that was just corn and some spices. i thought it weird it needed no oils, nuts, seeds or anything with a consistency of dates. after processing the corn in the food processor i did not see it possible for it to be dehydrated as it would have just come out as crumbs (maybe i should have used fresh corn instead of frozen?) so i decided to mix in some oil. it was mixing very well! so at this point i decided to make corn tortillas.
until i decided to look up a recipe for corn bread. i didn't have any almond pulp (i don't have any almonds so i decided to use cashew, i now remember that i hate cashews and i will never buy them again, and i bought so many nuts and seeds and i haven't gotten around to using them, and for some reason i got cashews.... yuck.) so i made a second batch and added the cashew flour, honey, coconut palm sugar, and some freshly ground cinnamon. it smells so delicious, but the cashews ruined it.
is this a good recipe for corn tortillas, tortilla chips, and cornbread? just the corn and olive oil? and i could add sweeteners or other spices depending on what i'm making.
any thoughts?
