I prefer the taste to agave then to honey. I'd like to substitute it for most of my recipes...I know some recipes I'd still need to use honey for the texture part of it, but what is the conversion?

I would start by using half the amount of volume of agave as compared to honey. Then I would adjust from there. Agave is sensative and one minute it is not sweet enough, the next it is too sweet. It is always better to start with a lesser amount and work your way up. I would like to use honey on occassion but I am vegan, so it is not an option for me. However, I have read about honey that is harvestes from beehives where the bees are not harmed.

Thanks Samuel. I happen to not care for the flavor of honey. But I'm totally in love with agave, it's sweetness without the flavor. It's exactly what I'm looking for...I'm only worried about if a recipe needs the stickiness from the honey. ::shrug:: oh well...we'll see. Thanks for your reply!
