I went to my local Asian market last night to purchase Thai coconuts (boy, did I get a deal! :woot: ) and they had fresh, local Fuyu persimmons (at least they look like Fuyu's). They are light orange with some green and I don't think they are ripe.
Does anyone have experience ripening Fuyu persimmons?

my experience is that persimmons do ripen if allowed to.

Yes, you can allow them to ripen. You can speed up the ripening by putting them in a paper bag with either a banana or an apple. But check them regularly so they don't over-ripen.

Yeah the persimmons are seasonal here and you only see them around this time same with the cranberries. I got a major deal on pineapples ($1 each), I grabbed 4 of them. The persimmons are pricy here though, at first they had them 2 for $3, then today they were $1 each. I got 3 of them. But I remember last year they were 50 cents each. Mine are firm but orange. So I figure they need a few days to ripe.

Try an Asian market. The one nearest me had them for $1.29 a pound. So, they were about .25 cents each. Mine haven't changed color at all. I hope they don't rot before they ripen!

I've seen dried persimmons in my asian market. They are usually <$2 for a packet of 4-6 and are very tasty. Can I assume they are raw - I read that not all dried fruit is raw?

You certainly can't assume it - though they may be. Fresh will taste better anyway.

i buy them from costco and eat them regardless of the level of ripeness. i just had two for breakfast... crisp and yummy. as they ripen the flavour changes and they soften. i love them i love them i love them!!!
