This was one of the other items I did in my food processor today - so easy, and even my husband likes my "ice-cream" variations better than regular ice-cream now, which I consider a huge compliment as he's not even raw, and I'm working my way back myself. Anyhow, this couldn't be easier - for 2 servings(which are in the freezer for later):
about a cup and a half of cut-up frozen bananas
about a half-cup(or even a little more) frozen raspberries I happened to have on hand
4-5 squirts of vanilla extract(out of the squeeze bottle I keep it in since I get the extract from the wet bulk area at my local old natural foods co-op)
a dash of good salt(brings out sweet flavors and "finishes" a combo)
Process all of this until smooth. Right out of the food processor container, this will be like quite soft-serve, which is fine, and one can put it in the freezer in individual dishes for later, and take them out ahead to soften it up a bit(it will harden up a lot when frozen).
The mango variation:
same amount of frozen bananas
half of a large mango, chopped
juice of half a lime
a bit of salt
Process all, and treat the same way.
What's really good on top of this is some berries that have been blended with a little bit of soaked dates, for a fruit sauce -mmm...
These are perfect for today, as we're headed into a 3-day heat wave in SF, one of the rare ones we get each year, but usually at this time of year.
