I just discovered this company looking for a sugar alternative. On the container of Organic Sugar Cane it says, under ingredients, "Organic Evaporated Cane Juice." I've seen this ingredient in some of my raw recipes; is this what I'm supposed to be using? Has anyone else heard of or tried something from this company? I checked out their website, http://www.floridacrystals.com/home.asp , and was very impressed with what they're doing to help save the environment, particularly the Florida Everglades. Should I e-mail the company and ask about the temperatures they use in their production just to make sure?

Drat!!

Oh well, at least I'm helping a really great company do some good stuff for the environment. And it's definitely better than regular white sugar (gasp!) or a sugar alternative (double gasp!) for my vegan fiance and my grandparents, whom I cook for every once in a while; my grandfather has high blood pressure, high cholestrol, and minor skin cancer and my grandmother still smokes (grrrrr...), so anything I can do to improve their diet is worth it to me.
