... the kind on the olive bar at Whole Foods market?
... or the kind in jars at the health food stores?
are these raw, or do I need to special order truly raw olives.

I have sampled NFL Peruvian olives, and they are nothing like the mushy kind in the store. hmmmm? - this is why I don't bother with olives, because I don't know if they are raw- can someone please clear this mystery up for me, because I love olives, but hate to wait on food in the mail... thanks :p

I posted a recipe for olives on this board a couple of days ago, and it was for all raw olives.

The olives are not heated or cooked in the process of curing, just like pickles, etc. however to "can" them properly, ALL jars must go through a hot water bath, which CAN heat the contents of the jar also. Depending on the length of time in the hot water bath.

So, I wouldn't worry too much about it, if you are not having cravings, and you love olives, and evrything else in your life is raw.

I buy my olives from the Deli, they come in huge 5 gallon plastic drums, with plastic screw lid, that is inset into the top of the conatiner, I buy about 3 different kinds.

They are all imported and supposedly all raw, I love them, but as I go more and more raw, I eat less and less of them, as they are now way too salty for my tastes.

So, that is what I know about olives.
