Ok, I'm making the enchilada as I type...can't wait! My question is, can I save some for tomorrow or does it sort of need to be eaten in the first day? I'm not having any sauce on it or anything so it hopefully won't get soggy.

I place them in freezer bags and freeze often, then reheat in the dehydrator, works great, have some in the freezer right now.
So, yes, you can keep them a while.
Good not to put sauce on them when you are saving them.

They are almost ready to be flipped after the first 3 hours...I hope I don't mess them up! They still seem quite liquidy on the non-dehydrated teflex side...I'll cross my fingers!
