View Full Version : POTATO CHIPS!!! Success at last.....

Alas, I've finally arrived. I've been experimenting with chips and never been quite satisfied. But these chips are astonishingly good. I had to share. I believe someone out there is craving something like this, much like I was.

I took the eggplant as bacon marinade and added some items to it. And OH MY GOSH!

3/4 cup olive oil
2 T apple cider vinegar
2 T honey
1 t salt
1 t dried basil
3 large garlic cloves
1/2 t paprika
and as much ground red pepper as you like. I probably used at least 1/2 - 3/4 t.

Blend all in the food processor till well blended. It will look like a salad dressing. And it's probably awesome on salad too.

Sliced potatoes and/or sweet potatoes in the spirooli or other appliance that slices ultra thin. Put the potatoes in a deep pan and pour liquid over them. Take a fork or large spoon and turn the potatoes in the liquid and mix really well. Make sure all potatoes have been in the marinated on both sides. Cover and refrigerate for about 3-4 hours or longer if you want.

Arrange slices on the dehydrator trays and dehydrate for about 10-12 hours on about 110. Salt again on the trays when you first put them in.

These smell awesome and they taste great warm and cool. But they SURE don't last long.

Katrina, I made potato chips the other day, too, but yours sounds even better! Can't wait to try them. Thanks for sharing!

You can use actual spuds for this one? One thing my children are looking forward to is chippins of various sorts, but I'd love to be able to do it with real organic spuds (potatoes).

Yes ma'am. Real potatoes. I used regular white baking potatoes and also orange fleshed sweet potatoes. Lovely raw potatoes.....you just have to make sure you slice them ultra thin, dehydrate plenty long enough till they're crispy and marinate them plenty long enough to absorb the oil and spices. For your kids, though, you might want to omit the hot pepper.

Oh wow. I hope my dehydrator arrives soon! My 2 older kids, DH and I would love the spice, but yes indeed, omit the spice for my 2 youngest girls. I'm all stoked now, my children are going to love raw...

So, in other words, you used the eggplant bacon marinade then added the other ingredients? You didn't use the eggplant bacon, just the marinade for it?

THis sounds like a winner. I will use the sweet potatoes to lower the glycemic index a tad.

Yes, I only used the marinade part...olive oil, salt, honey, vinegar....no eggplant involved in the potato chip recipe. :)

Thanks for sharing this! :) I'm going to try it before these potatoes I bought go bad... I was just going to slice thin and add salt and see how it went. How boring. :rolleyes: Your post came just in time! LOL

Ya'll let me know how yours turn out or if anyone does a different flavor variation. I was thinking the next batch might be rosemary/lime. :)
