View Full Version : Raw eggs...? Need input :0

So, my sister just bought me a dehydrator from a yard sale for $1, granted it's one of the round ones, but I'm still stoked and have strips of seasoned eggplant in it right now. The eggplant strips made me think of "raw bacon" recipes. Then I started thinking about eggs.

I sort of had a crazy idea that, maybe, just maybe chia seed gel in the dehydrator might give me a scrambley eggy texture, has anyone tried it?
Another thing is, immediately what popped in my mind to color and flavor them, was nutritional yeast, but I am very weary of using it and don't really ever want to. Anyone have any ideas? Or anyone ever try making "raw eggy type things" with chia seeds? I try to look recipes up but only find egg salad, or eggnog, lol.

chia and flax get used a egg replacement in baked goods so it may make what you want. You could mix it with some juicer pulp maybe to work toward the flavor and texture you'd like. Turmeric or saffron for yolk flavor and color. Dried sweet potato shreds mixed in the chia egg.

I think for chia egg in a flour mix you use equal parts chia and water. 2T iirc.

Don't know what it would dehydrate like after gelling but it would likely be crispy like flax crackers. That's why I suggest maybe adding the pulp of something. My wife made pulp crackers that were fairly soft and tender with rubarb and strawberry I think. How about a white berry and a light colored root like rootebaga, sunchoke, potato, turnip, radish or parsnip?

Any Phyo has recipes for mock egg scrambles in her books. You might want to check them out!

We purchased a small jar of Kala Namak Black Salt from India (http://www.amazon.com/Kala-Namak-India-Black-Salt/dp/B004IJFE14/ref=sr_1_4?s=grocery&ie=UTF8&qid=1343092153&sr=1-4&keywords=kala+namak+salt) from Amazon last year. It has sulfur in it and it gives a nice "egg" flavor when used with something like ground sunflower seeds. We don't use it very often, but when you open the jar it reminds you of boiled eggs.

I really wish I could remember where I saw someone make an egg salad with sunflower seeds and alfalfa sprouts. It looked really good and I just can't remember where I saw it.

You can make a simple recipe with macadamia nuts

I don't know if Alissa's has one but if not,

Matt Amsden "RAWvolution Gourmet Living Cuisine" OR look in the youtube, there must be a recipe


Matthew Kenney "Everyday Raw" Has a very good recipe but it is more step. It is bearable to do and you need Iris moss for that. You make a tofu and then you make scramble egg from it. It doesn't keep long and it needs to be eaten the same day. You can also freeze it if too much.


I think if you use the chia seed in the dehydrator, it will get hard. Many use this to make crackers. Anyway, let us know if it works.

Pick a raw vegan "egg" salad recipe (there are many online) and try tweaking them and dehydrating.

For eggy textures & flavors, I suggest focusing on:
Young coconut meat
Turmeric
Mustard
Black pepper
Salt
Macadamia
Strained chia gel
