Hi,
Anyone got some recipes for almonds, walnuts, cashews, pumpkin seeds, sunflower seeds, hemp seeds, chia seeds etc? I got a lot of this stuff and don't really know what to do. I used to make lots of nut based foods and got bored of them.
A few things I already make with them: Kale/avocado salad (almonds), beanless chili (walnuts), chia porridge and some times pudding.

And if you have cacao (raw cocoa) then you can make brownies or cake with those nuts! Alissa also has a recipe for chocolate frosting in her latest book using cashews and cacao!

Allissa's book have so so many recipes using those nuts.
Here is something that i love to do with the almond. It is a long process but worth the time.
Soak your almond for 3-4 days (rinse 2-3 time a day to prevent to get bad). Remove the pill, it should come easy after soaking so long. Throw the dark one, it is mold.
Put in your high speed blender and add enough water to blend (no more then two cups of almond):
First option:
Yogurt:
You need a nut bag. Squeeze the liquid as much you can. It is hard work but great exercise for your hand. Poor the liquid in a jar. Don't close it and let it sit over night in a warm place. The next day, you will have like a cream on top and this is your yogurt. So delicious with fruits.
Second option
Make a ricotta cheese
Place in a nut bag and inside a boll with something heavy on top (do this for about one hour or more, i don't like strong cheese taste, so i don't do this for long). Once ready, get it out of the cheese bag or nut bag, place inside a clean boll. Add nutritional yeast maybe one table spoon, pinch of salt and fresh chopped herb if you have any (you can add something spicy if you like such green onion, garlic, pepper) and a little bit of lemon juice or lime.
Blend by hand and you have a cheese. If this is watery, place back in the cheese bag or nut bag and place something heavy on top such a jar of water.
You can make a delicious lasagna with this cheese etc... and even freeze it. Delicious with any meal.

Get all the nuts crashed. Mix it with sugar and cocoa powder. Cool it in the fridge and eat it as your snack. That's yummy!
