I have some metal mixing bowls, but I remember hearing somewhere that metal is not a good thing to put your food in due to reactions with the food, etc. Is it better not to use them to soak nuts in, etc?

Are your bowls stainless steel or aluminum? If they are aluminum, please get rid of them - as aluminum is reported as being associated with many health of problems - Aluminum is fairly soft and will release more molecules into the food than harder metals used in other cookware. Alkaline foods will increase the amount of aluminum that leaches into the food. There are some theories that aluminum in the food is a contributing factor in the increase of Alzheimer's disease. This has not been proven, but some people have shied away from aluminum cookware, just in case.
Stainless steel is considered the best material for cookware because it is very neutral and easy to clean. Cooking acidic food in stainless steel can result in a small amount of chromium leaching into the food. Stainless steel that has been cleaned and scoured with a metallic pad may also leach a small amount of nickel into the food, when exposed to alkaline food.
Other Benefits of Stainless Steel:
It is one of the most hygienic surfaces for the preparation of foods and very easy to clean, as its unique surface has no pores or cracks to harbor dirt, grime or bacteria.
It is very attractive and requires minimal care, since it won't chip or easily rust and it takes little seasoning.
It will not affect flavor, as it does not react with acidic foods during food preparation or cooking.
With proper care, it has a useful life expectancy of over 100 years, and it is totally recyclable.

Thanks Sweet Lips. :) I don't know for sure if they are aluminum or stainless steel, but I'm suspicious that they're aluminum because they are not smooth like a stainless steel pan. I'll err on the side of caution and get rid of them.
