View Full Version : how far ahead of time can I prepare my vegetables and juices?

How long can a salad be stored? Generally I've been eating my salads immediately after I make them. I would like to rinse and mix some vegetables ahead of time. Maybe a day or two days ahead of time. Is that ok to do? I read somewhere that you shouldn't rinse your vegetables and then put them back in the fridge again. What do you think?

How about juices. I've read that if using a centrifugal juicer the juices should be consumed immediately after making them. My juicer is a bit unique. It's a Hurom Slow Juicer (HU-400). So maybe the rule about drinking the juices immediately after making them doesn't apply. There isn't any reason I would want to make a juice more than a day ahead of time. I always make my juice in the morning. Would it be ok to make all the juice that I intend to drink throughout the day in the morning. That way I wouldn't have to wash my juicer more than once per day (that's really annoying)

Salads......make ahead if you need to but keep wet veggies, ie... tomatoes & cukes, etc...separate from the greens so they will not be wet and soggy and prone to spoil sooner. I sometimes fix my greens and store them, after drying in a tub with several paper towels to absorb moisture...works great. Keep the other veggies in a separate container.

Juices- I have the Omega Vert and my juice keeps beautifully for several days.with a quick juicer yes, right away is def, best. I make enough for two days at a time.

So I can prepare my salad greens ahead of time? I think I'll just use a small towel instead of a dish towel; no need to waste paper towel.

For juices and smoothies, I follow 2 hours on the table, 2 days in the refrigerator or 2 months in the freezer.

There are bags and containers that prolong the life of greens so they would keep your salad in better condition.

What kind of bags? Can you elaborate?
