I'm opening a raw restaurant soon. the health department is giving me a problem about sprouting and dehydrating because the foods need to be either hot or cold. I've decided to just not use dehydrators. Would anybody here be opposed to that route. I feel like non-dehydrated raw is the best anyway. It will also simplify my food a great deal. Less options, less complications. Also, what are your favorite non-dehydrated raw dishes. The other day I made Pizza Boats from Brian Au's book "Raw in ten minutes"

Wouldn't crackers be OK? What is the problem with sprouts?

I have bought a restaurant in Vietnam and will be going there this month to take over and turn it raw.
I will spend the fist month with some minor renovations and sourcing produce. I plan to use local produce as much as possible.

I am a trained chef not that it means much but I have managed kitchens.

Would you like to exchange correspondence on getting a raw restaurant up and running, the trials and tribulations and the joy. ( I am sure there is a reality tv show in there somewhere)

Seriously I think it could be useful, if not entertaining, we are on different sides of the world.
My market will be tourists and expats and perhaps some curious locals.

By the look of the kitchen local health authorities seem to be the least of any potential problems.

There is all kinds of food you can make--pates, "sushi" (fillings wrapped in nori), raw soups, salads galore, raw lasagne, hummous and tabouli (I use hemp seeds in lieu of bulgur), stuffed peppers, etc.

IMO, you can do a lot better than Bryan Au's book. Try looking at the recipes that do not require dehydration from Alissa's books, as well recipes from books by Sarma Melngailis and Matthew Kenney. Sarma and Matt's book 'Raw food real world' has some no-dehydrator recipes; Sarma's book 'Living and raw foods' has some, and there are NO recipes that require dehydration in Matt Kenney's 'Everyday raw express'. I am suggesting recipes by Alissa, Sarma and Matt because they are professional restauranteurs and their recipes have a level of sophistication that I think people who are paying money for raw food would really like to see.

Recipes in Jennifer Cornbleet's 'Raw food made easy' also do not require dehydration, although if I went to a raw restaurant, I'd want something more sophisticated than Jennifer's recipes; they are great for everyday, though. I don't own a dehydrator myself, so I am always looking for interesting recipes that do not require dehydration.
