Hi,

I'd like to start making Popsicles. I just went to Crate and Barrel and bought the cutest Popsicle makers. Now, I KNOW that freezing kills some of the vital nutrients and I won't be getting all of that wonderful juicy goodness, and I'm OK with that. Anybody have any great recipes and or experiences. I'd love to make a chocolate fudge Popsicle? And, how about adding some almond milk? That it seems would make it even creamier (I hope). Any ideas?

orange juice plus almond milk plus vanilla extract for the pop up type ice cream , is it pop up or creamsicle i cant recall because been 2o years since going vegan i quit icecream

freezing doesn't kill nutrients. Nutrients are not living things. Does freezing damage nutrients? I doubt it does any significant damage. The damage it does is to cellular structure which breaks down and the juicing people here would probably say freezing is a gentle way to release nutrients. But that aside. Chunks of frozen watermelon are good. Instant popsicle without having to have moulds. Puree peaches, mangoes, papaya and any fruits you like and pour into popsicle moulds adding water if the puree needs thinning. Delish.
