Hey,
I came here wanting to do more research into the raw diet. I am 47/60 days into a juice fast and so I am anticipating the move into eating raw for a while. I am looking forward to it too much. I hope to do as much as I can to help people and listen to people.
Greetings and congratulations on your juice fast. I cam here a few months ago seeking the same information. I ended up finding some great answers in the book: "Becoming Raw, The essential guide to Raw Vegan Diets". I hope someone corrects me if I'm wrong, but this is what I got out of it:
Eat raw veggies, fruit, nuts, seeds, sprouted legumes and sprouted grains. If you can get plenty of sunshine, you don't need a vitamin D supplement. If you plan to be raw for years, you should be getting your B12 either from a supplement or nutritional yeast that's been fortified with B12. I say years because that book explains that most adults have about a two year supply of B12 before they start testing deficient.
It's all in that book. It cites all the studies and research for EVERYTHING. It even sheds a very unbiased light on subjects like Howell's ideas and facts about food enzymes.
