Chipotle Lime Tacos



Ingredients:

8 Pieces of Romaine Lettuce

1/2 – 1Cup Cherry Tomatoes sliced in halves

1/2 Cup Pea or Sunflower Sprouts

1 Avocado

1 Tbsp Nutritional Yeast

1/4 tsp. Chipotle Seasoning

1/2 Lime, Juiced



Methods/steps

Wash all of your veggies. Tear your romaine lettuce from the head and place the leaves on their back so you can fill them up. Place your sprouts in first, then place your cherry tomatoes on top, slice 1 avocado in very small slices and spoon out gently so you don’t turn it into mush. Take the slices and portion out across all of the tacos. Sprinkle on your nutritional yeast and chipotle, then squeeze your lime on the top of each taco and enjoy!

My local Trader Joe's just started carrying them, so maybe yours does to?

Where can you get pea or sunflower sprouts?p.s., they are super easy to grow! I've been growing them for a year and a half now and if you ever decide to go that route, not only are they a fraction of the cost of buying them already sprouted but they are better quality when you grow your own**. They last much longer, too, since the ones I bought at the beginning until I had my own growing system were brought to the health food store packaged in bags which makes them go off very quickly. I have large plastic food storage "boxes"*** (so large I'll call boxes) with lids that I cut the sprouts into and they go straight into the fridge. They keep fresh and firm and a lovely green for up to several days. Unhulled Black Oil Sunflower seeds are quite expensive for me to buy ($12.00 per kg - one kg being roughly, what, 2½ pounds) but you get a lot of sprouts!

** unless you buy have access to those specialty sprouts that are grown with all sorts of special care - I don't know, seaweed water, whatever, etc. But those are SUPER expensive. They're better-looking than what I grow, but not really by much. So I'm happy with growing my own.

*** dimensions = ±6" x 12" x 3" - these hold a lot of sprouts ... 1 whole tray of fully grown pea sprouts or up to 2 trays of sunflower seeds sprouts.
