A friend just sent me 3 in the mail!

What's your favorite way to have these? Eat em straight or make a recipe?

I'm open to all suggestions........ I've never had one before!

Coconut Smoothie:

Thai Coconut Meat and Water
1 cup frozen or fresh Pineapple
Juice of 1/2 small Lime
Pinch Sea Salt
1/2 tsp Vanilla

Vita-mix that baby till smooth and creamy!!! Yummy!!!!

----OR----

Drink the water...take the Coconut Meat, and make:


STRAWBERRY COCONUT PUDDING
fresh Strawberries
Thai Coconut Flesh
Raw Agave, if needed
1/8 tsp Sea Salt

Yummmmm!!!!! I'm jealous!!!

My favorite coconut meat recipe is a raw custard. I use the water in my smoothies or in a pineapple/cucumber juice.

I'm a big fan of curry. ;-) No specific recipe though cus I usually don't find young thai coconuts in my area.

Yes, a custard/pudding type dessert sounds perfect.......... I did open one yeterday and just had it on its own, IT WAS SO GOOD!!!!!!!!!!

Hahahahahaaa -- I'm not sure I'll be able to resist just eating them straight. :eat

I love the coconut 'bacon' recipe in ani phyo cookbooks. It's awesome on a sandwich of onion 'bread', tomatoes, avo and a nut-cheese spread. Goodness! Do you have a dehydrator?

Yes I have one, but I confess I haven't been using it much lately! Nut cheese, avo, onion bread..... oh my!!! That sounds AMAZING even without the coconut hahahahahaaa!

I use the coconut water in my chocolate malts (aka cacao shakes) and so always have tons of meat left over.

I freeze the meat and save it for recipes like this one:

Thanks for the reply, raw angel mom! I've been sick w a cold so I didn't see this earlier..... I was hoping for a simple dessert idea, if you know one? I still have ONE coconut left, YUM!

You can make icecream or a pudding.

Icecream, blend the young meat with just enough coconut water to blend (not too much), vanilla and a sweetner ( i use raw honey). If you like chocolate, add cacao.

Freeze in silicone muffin container. Once ready, take one out and let it sit out for 5-10 min, it will have the texture of icecream

For the pudding, it is the same recipe, except your refrigerate.

If you want a quick meal, slice in strip like noddle. If they are thick, then fillet them. Eat with simple cherries tomato. You can also make a tomato sauce or any sauce.

Another alternative,you can make a French custard. Same as the pudding, but use orange juice instead, vanilla and a sweetener.

My daughter loves ice cream

p.s If you have Alissa's banana fruit leather made, you can use the coconut pudding to do the cream instead of nuts. I use that for my daughter's school.
