What to do with lots of Arugula?

Hi,

I planted some arugula last year and harvested a tiny bit once. I ignored it and now have some big mounds of arugula. I need to harvest it all cause I see they are sending up little shoots with some flowers forming. Anyone got a recipe that uses lots of arugula? Something else besides salad preferred. Thx

pesto with raw olive oil and raw walnuts. Very nice.

Since it's so spicy, I would make a wrap or crackers with it in the dehydrator. I have tried juicing it and putting it into smoothies, but it is way too peppery for me!

Look for juicing recipe with arugula. I love arugula. I haven't made juice yet but i want to do it.

I made some pesto and juice. Both are pretty strong cause of the arugula. Still got tons of arugula too.

give some to friends, keep chickens and give them some (mine love it), offer it to local restaurants or food charities

Again, try crackers! Because of the peppery taste of arugula, I would think it would be perfect for raw veggie crackers!
