View Full Version : Creamy Cauliflower Soup

Just wondering if anyone can suggest a soup recipe to get a similar flavour to a traditional cheesy/creamy cauliflower soup. I don't want the flavour to be overcome by other tastes so just the cauliflower taste if possible. I made one before but it seemed when I blended the cauliflower it was very bitter and actually just plain and simply disgusting :o

I wanna know about this too! I love raw soups but I'm too afraid to use cauliflower to make a soup because I worry it will taste yucky. Maybe blending with miso might be nice? I wonder what other spices would be good

Here's a good one for ya!

1 cup of roughly chopped cauliflower
1/4 cup cashews
1/2 garlic clove
3/4 cup water
1/2 to 3/4 teaspoon celtic sea salt
1/2 cup finely chopped cauliflower (reserve - do not blend)

1. Add all ingredients (except the last 1/2 cup of cauli) to your high-speed blender.

2. Blend in your high-speed blender. Start blending on low and work your way all the way up to high. Blend for a long time til smooth.

3. Place your 1/2 cup chopped cauli into a bowl. Pour blended soup mixture on top. Mix gently with a spoon.

4. Serve immediately. For an added touch, garnish with thinly sliced avocado.

That recipe looks really good! I can see how the cashews would help balance the cauliflower taste so it wouldn't be so overpowering. Little bits of broccoli might be nice in there too. Or maybe a little nutritional yeast, if you're one that uses it. Mmm... can't wait to get a decent blender some day.

Just made it and I'm coughing here with the strong taste of garlic, will try double up on everything else and see if it calms it down a bit :P

Hmm, even after doubling up, the garlic taste is far too strong still. It's not enjoyable to eat but I'm trying to get it down not to waste it :P Sorry, but thanks for the recipe anyway :o

Recipes don't have to be followed exactly.... if you don't like as much of something, just add less next time. If you need more, you can add. Really hard to 'water down' strong flavors.

You're right there, maybe the garlic I've used is just too strong. I added some to a Broccoli soup I've made a few times and it made it worse too.

Do you think this will still taste good if made in a blender that's not "high speed?" I don't have a Vitamix yet. I was considering putting everything in a food processor and then transferring it to my regular blender. I don't want to go to the trouble of purchasing the ingredients and everything if it's not going to work with my equipment. I'm worried it will have a grainy texture. Perhaps soaking the cashews will help. Please let me know if anyone has an opinion on this...

PS: I fell off the raw wagon hard! I'm so ready to get back on. :)

Yeah, just soak the cashews for a few hours (half an hour minimum) to soften them up. It should be fine! I used to make cashew-based sauces, smoothies and soups all the time with my old blender, no problem.

Thanks, Qwerty. I am going to have this cauliflower soup for dinner tomorrow with some flax seed crackers. If I remember I'll take a pic. I was thinking of doing a blog to document my journey. I think it would be so fun! Tonight, however, my husband wants to take me out for my birthday. He really is a wonderful man and supportive of me wanting to go raw, but we just don't have any options here. I have looked at the menu and will have the vegan meal and a glass of wine. I do wish there was a raw restaurant in the area, but no luck there. Then, tomorrow it's back to raw.

Just the taste of garlic was far too strong, it was burning my mouth actually. Seems to happen with raw soups that I put garlic into, it just always seems too much.

Hi cormie ~ Raw garlic is SO strong for my taste. I have to be real careful how much raw garlic I add to dishes...

Garlic can be stronger depending on the size of the clove, the type of garlic, how old it is, etc. If you're having a hard time with 1/2 a clove, I'd leave it out and substitute with a little garlic powder instead of pepper and maybe add a small chunk of onion to the recipe (small!)
