Can you give me some recipes tht use cauliflower? I have a whole head but dont know what to do with itthat would make it yummy

Honestly.... I love cauliflower just dipped in guacamole... I also eat it with a little tomato sauce over them.. You could make a nut cheese and coat them with it and dehydrate them for a few hours... Yummy.

If you're okay with nutiritional yeast, you could make green cauliflower popcorn -- or my fave, cauliflower rawritos!

Here's one of our all-time-favorite salads using cauli:

I made it 2 nights ago. So delicious! Here's the recipe tweaked for our tastes:

Spanish Rice - Paul Nison

1 head of cauliflower, grated in a food processor
4 green onions, diced (can use sweet onions)
2 tomatoes, diced (I add more tomato)
1 orange bell pepper, diced
½ - 1 jalapeno pepper
2 tablespoons fresh lemon juice
1/4 cup cilantro diced
1 avocado mashed in (I blend this in the food processor and then stir in)
1 teaspoon chili powder (I double this)
1 tablespoon paprika (I double this - makes it all a beautiful red color)
½ to 1 teaspoon sea salt or to taste
1 tablespoon cold pressed extra virgin olive oil (can omit)
2-3 tsp ground cumin (to taste)

Mix together well and serve. As a side dish, serves four.

Deb this looks AMAZING! Do you process with the "S" blade or do you use the shredding disc?

Hi qwerty - Do try this, it's AMAZINGLY good!! This is probably my huband's favorite. I do put in a lot more than 2 tomatoes. But, I admit to being a tomatoho. ;)

I pulse the (chopped up a bit) cauli (1/4 head at a time in my 11 cup processor) with the S blade. I do it this way to get an even process. More than 1/4 - 1/3 head at a time and I end up with a puree waiting for the larger chunks to get processed. I'm sort of anal about my textures :weird

Another thing - I'll go back up and edit. I at least double most of those spices. We like it spicey (not necessarily 'hot' - just spicey, flavorful).

OOOO all of these sound soooo good! Thank you for the suggestions! I will try all of them! Qwerty, did you come up with the popcorn idea? Do you dehydrate? I dont have a dehydrator. Would it be OK without?

No, the famous green popcorn is Philip McClusky's brainchild, not mine! I did however come up with the Rawrito version.

I tried dehydrating it and frankly preferred to eat it fresh. Phillip McCluskey came to the same conclusion regarding the original version too.
