I put the rest of raw coconut peices in the blender last night with some coconut water. I made what I think you all call "coconut milk" (which is good stuff, I found).

Anyway, when I was cleaning out my blender, I found this solid, fatty mass of what I assume is coconut butter. It seems just like the bad stuff, but it's obviously raw. I imagine if you could somehow work salt into it, it'd be great on a lot of stuff (flax crackers, for example).

Does anyone use this stuff? or is it so loaded in fat that I should just chuck it?

I make chocolate chip with coconut butter. Add cacao and a sweetener while mixing in a boll (that is soaking in warm water). Spread on a baking sheet and freeze. Cut in pieces when you need the chocolate chips. It doesn't take long to harden.

You can make many pastry also with it.

Thank you for the reply. It seems like not many people use it for anything. I'll probably just chuck it. I had a piece. It kinda tasted like I was eating a stick of butter - not very yummy on it's own.

I actually purchase coconut butter and it makes the BEST raw fudge!
