it's in season and on sale at my grocer's (it's organic too!) - acorn, butternut, pumpkin, hmmm that's all I can think of.
I want to make use of some this year -
but I don't know how to prep it up in general. (for vitamix or spirooli type recipes)
do you peel it? do you use the seeds?

Hmm..just noticed no one responded to this one!! So far I've used butternut (my all time fave) and acorn. I only used them to make noodles, so I did peel them. Unfortunately I don't have a spirooli yet or any other gadget so I use a lemon zester (lots of work, but worth it) and just zest away until I hit the center where the seeds are. The acorn squash was a bit more difficult to get the noodles out of using the zester because of the shape, but the butternut came out delish. I think an alternate recipe, if you have a dehydrator can be to slice in thin slices, spice up with some pumpkin pie spice of just cinnamon and honey and dehydrate for a yummy treat...
