Career in the Raw Food Field

How does one go from working in a cubicle to working somehow in the raw food field? What sort of experience would be needed in getting into these raw food retreats? I was looking into the ann wigmore institute to learn some pointers, as well I was looking into the raw food culinary institution in Fort Bragg's California. I have graduated from a school here in Canada for Holistic Nutrition.
Any guidance would be appreciated!!
