Butter

1/2 cup nut milk, strained well
1 tsp ACV
1/2 tsp sea salt

1/2 cup coconut oil, melted
1 T grapeseed oil or other lightly or mildly flavored raw oil of your choice
1 T lecithin granules

Optional: butter flavoring to taste

Mix together nutmilk, ACV, and Salt (may adjust to taste) in a bowl and set aside while you do the next step.
In a second bowl, mix together coconut oil, grapeseed oil, and lecithin.
Add butter flavor if you want to.
Pour nut milk mixture into the coconut mixture. Whip with a stick blender or food processor until well blended and lecithin is dissolved. Pour into mold or bowl and refrigerate until firm.


This is a good base for the butter. Try adding different herbs, etc. to customize it for your needs. If you want it yellow, maybe add turmeric or saffron? I don't mind the whitish color.

(yes, you can taste the flavor of the coconut oil. i have used the butter flavoring, I think it tastes terrible with it)
