Here's my first attempt at Tikka Masala.

It still needs some refinement, but it's pretty good. It's a nice tomato/cashew base cream sauce.

I think I put too much garam masala in it, so if you give it a try start with less and add more to your liking. Also I made my own garam masala and if you don't like it spicy then maybe don't use as much cayenne.

Here's the recipe

1/2 c. coconut oil
2 c. soaked cashews
4 c. chopped tomatoes - "I cut them into eight's to measure. It was 5 vine ripe tomatoes, though they seemed small compared to some tomatoes I've seen."
1/2 an onion - "I used a sweet onion."
4 cloves of garlic
1" x 2" chunk of ginger
2 deglet dates - "I think the sweet medjool may be better, but I didn't have any."
3 Tbs Garam Masala - "I probably used too much. Maybe start at a Tbs or so and work your way up if needed."
2 tsp. sea salt

Put it all in the vitamix and whizz it up. It makes roughly 6 cups of sauce. Then just pour some of the sauce over some mixed vegetables. My mixed veggies were; carrots, celery, cilantro, orange bell pepper, and cashews. I store the rest of the sauce in a mason jar, and mix it with the veggies when I'm ready to eat.

Here's the Garam Masala recipe I used. All the spices are ground. "I enjoy my coffee grinder ;-)"
1 Tbs coriander
1 Tbs cumin
1 Tbs black pepper
1 Tbs cayenne pepper - "again, use less if you don't like it spicy."
1 Tbs fennel seeds
1 Tbs ginger
1 Tbs cardamom
1 Tbs nutmeg
1 tsp. cloves

I'm thinking this sauce would be REALLY GOOD over sprouted quinoa!

Yummy, but not so good as compared to Asian ones. The have excelled in it.
Believe me, those are superb. Has anyone of you tried it?

Those Pakora's look delicious. I may have to make me some of those the next time I make the sauce.

I made the Tikka Masala again a few days ago. I only had walnuts. It was still good, but I prefer the cashews. I also decided to use only 1 Tbs of Garam Masala. I liked it but I think the next time I'm going to use 2 Tbs.
