Hi. So, I've eaten out with clients for lunch twice in the last two weeks. Both times, ordering a salad with oil and vinegar but opting just for the oil on the salad. Today I ordered a greek salad minus the feta and requested avocado. I only ate half the salad at lunch and ate the other half for dinner with some pate. Instead of putting dressing on what I was about to eat, I used salsa. OMG!!! Awesome.
It was a salsa that I made in the food processor and had:
2-3 big organic tomatoes
cilantro
red onion
garlic (1 glove)
olive oil
lime juice
a hint of agave

blend slightly to remain chunky.

I'm assuming the kalamata olives on my greek salad today were not raw...right? I still ate probably 4 between lunch and dinner!! Wonderful~!!!

Hmmm...mexigreek salad. I like it!! heehee
Sounds wonderful.

I was on the hunt for a new salad topper and someone on the forum told me just dice up or whiz mangos and put it over the salad. I thought to give it a try. It complemented the onions perfectly.

I guess sometimes the simplest flavors of the tomatoes or fruit really are pretty darn amazing.

Thanks for sharing!

I like it. Salsa is so good with some heirloom tomatoes and cilantro. I've been trying to find substitutes for olive and flax oil. I made a dressing with two limes and two kiwis and where I mashed the kiwis into the lime juice with a fork. Ended up drinking the bottom of the plate it was so good.

It's not mine...Ü...and I have yet to try it. When I do, though, I am thinking of adding a few slices of fresh jalapeno to the ingredients for heat! YUM!!!

Those all sound amazing!!! I eat salsa on my salads all the time, it's kinda a staple in my home. Also I made an asian slaw last week and just the juice from it was so good I put the rest on kale and it was amazing!! Even had my co-workers drooling!! *hehe*
