View Full Version : Possibly the BEST raw soup I've EVER tried!!!!

From "The Raw Food Detox Diet" by Natalia Rose:

Raw Harvest Butternut and Coconut Soup

Makes 4 servings

Meat of 2 young coconuts
1 1/2 cups coconut water
1 cup butternut or pumpkin cubes (I used pumpkin)
8 organic dates or 1/3 cup maple syrup
1 pinch nutmeg, cinnamon, or pumpkin pie spice

Combine all the ingredients in a blender and blend on high until smooth. Enjoy!!!!!


THE BEST soup ever!!!!!!! I thought for sure that it would need more seasoning, such as sea salt, or ginger, or curry, but I tasted it and YUM!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!! =) Must try!!!!!!!

I saw your post sitting out there looking all lonely. I thought if she has enough enthusiasm to call it the "best raw soup", then I should at least reply. Maybe I will have to give this soup a try.

someone was looking for a pumpkin soup just a couple of days ago, and this does sound lovely.

Dragggon and I will be staying home and doing our own RAW Thanksgiving, and this soup really sounds like it would be perfect.

If your blender isn't strong enough, try grating first.

Yay! Thanks for the replies! A vitamix can certainly handle raw pumpkin....for other blenders, grating it first is a good option! =)

I was looking for a butternut squash soup 2 weeks ago. I did get some replies, but I think this one "takes the cake". I made it tonight and it is *fantastic*! :D Hubby had to make a special trip for the coconuts, but it was totally worth it. YUM!!! :D

I wish you could see how long my hair is in the pic. On raw it has grown like the proverbial weed! I've had it trimmed about 4x since going raw and it's still about 2/3 down my back. Also, it is much thicker now than ever before!

Back to the OP:

Samuel: It's sweeter than the other Butternut squash soup I made, but not too sweet. It is delicious!

Just in case no one else tried this recipe (LOL) I just did and HOLY COW! It is super yummy!

I only have a cheapo blender, so I started with the water and dates, blended till smooth, added in the coconut meat, and slowly added in the shredded pumpkin. I had to add some more coconut water to keep things moving... still turned out thick though! I used 5 fresh mejdool dates and it is too sweet for me, next time I will use 3. Also, I put in a pinch of cayenne pepper!

This is soooo good! I am going to freeze the rest in my ice-cream maker and have me some pumpkin ice-cream!!!

Any ideas for the rest of my pumpkin? (I only used half in the soup)

Bumping...

I just made this soup. Only difference: I used 5 dates and 1/2 t pumpkin pie spice. I would recommend not using the dates at first, taste then add them if you need to. It was very sweet, very filling and very good! Great hearty winter soup... almost like a liquid pumpkin pie!

You WHAT?? Carmella..... how did you hold on to those coconuts for so long? I just bought 3 last night and they are all used up: between this recipe and petals chocolate/cherry pudding. I'm trying to figure out how I can grow a coconut tree in my 2 bedroom apt so I can always have fresh on hand LOL...

This made me laugh, because I was just looking up on the internet if it would be possible to grow coconuts indoors. BTW, the answer was NO.
