Anyone have any good recipes for low fat dips, hummus, or salad dressings?
I really want something creamy or that has a good consistency.
I don't digest fats very well, even with enzymes, but would love a creamy dip or dressing to have around.

I remember making a hummus type dip that used zucchini and green leaf lettuce. I don't think it had any Tahini in it, but
I can't be sure. I tried doing a search, but didn't have any luck.

Any suggestions would be greatly appreciated :heart

Thanks!!
Cathy

You can see the changes that I made to the dressing in the post. Since I like it spicy!

I just noticed you stated "creamy". I wonder if you could blend this recipe with a skinned zucchini to make a creamy version?

Here is something simple that you need a good blender and nut bag.

Soak 1 cup of sesame seed in the morning (place your seed in the nut bag first)

At night, rinse your sesame seed, and let them drain (I hang the bag on my kitchen panel, and place a boll under).

While this drain, juice one lemon, if you don't have much juice, juice another one.

Place your seed in your blender, add lemon, a little bit of coriander seed, cumin, garlic (if you don't like garlic, you can use onion), Himalayan salt (a pinch). And blend full speed until smooth. You can add a little bit of water to help, use the plunger if you have a Vitamix.

Fee free to add any fresh herbs that you like, Enjoy!

p.s When you soak your nut or seed, the fat brake down.

Dressing, blend tomato (cherry tomato are better), orange juice/lemon juice and fresh herbs. Add any seasoning, garlic or onion or sea salt if you like. If you want it richer, add a nice avocado (this is a whole food, it is ok to eat fat this way)
