I'm almost 50 years old, and until today I have never had fresh coconut. It's WAY better than the stuff they put in candy bars. Now I just need to find out all the nutritional details.

Oh, I looooove raw coconut too! I'll eat a whole one in just 2 or 3 days, snacking away.
I haven't even bothered with making any raw deserts because I just love to snack on that (or dates) whenever I'm craving something sweet, chewy or kind of wicked-seeming.
They're high in fat but it's a healthy fat so unless you're eating one every day I wouldn't worry about it.
I just picked up a case on Friday of young Thai coconuts. They are delicous! I love them...

I thought I saw that it is saturated fat? And I only ate 3 ounces of the meat, today. I would have eaten more but decided that I needed to learn more before eating more. :)

It's a healthy fat. Coconuts and coconut oil are very healing foods. Munch away!

They are awesome. There are post on the internet that if you take 1 tablespoon of coconut oil a day it will help you loose weight. Enjoy

I've read this too,and I've been taking in a tablespoon for a couple weeks now and it completely eliminates all bloating for me. It's got healthy fats and oils and seems to be a complete superfood all by itself. You can apply it topically to use as a natural moisturizer for skin, and lips. The water inside is also an amazing source of electrolytes. So it's the only thing i drink before and after working out. Those are just few benefits I've found so far. Oh and one more thing- It has helped me with eliminating dark circles and puffiness around the eyes.

How do you "take" the oil? Like on a spoon and just swallow it?
I used to add coconut oil to my green smoothie.
If you want to try something tasty with coconut oil, we call this CocoCrack:
Coconut Bark
1 cup coconut oil (208 grams)
4 tablespoons cocoa
4 teaspoons stevia
1 teaspoon almond extract
Melt the coconut oil over very low heat and remove it as soon as it's melted. Gently whisk in remaining ingredients, using the amount of cocoa powder to your taste (I use organic cocoa powder as I've never used cacao). The stevia we used was: Sweet Leaf (http://www.amazon.com/SweetLeaf-Stevia-Extract-Powder-9-Ounce/dp/B001EQ5PKE/ref=sr_1_31?ie=UTF8&qid=1326176612&sr=8-31). (I've only made it with this stevia and I do not know how to convert it to other sweeteners.)
Okay - take the mixture and pour it into 1-2 large pie pans (depending how thick you want it) that's been lined with plastic wrap. Or you can pour it into silicone candy molds, etc. Pop it into the freezer and freeze, it takes very little time to freeze. Pop it out and crack off a piece of cococrack! These are YUMMY-licious!
They have to remain in the freezer or they'll melt. *Ü*

I put it in smoothies, mix it with almond butter and honey put on flax crackers. However I can eat it.

For great info on coconuts look up or read up David Wolfe's book, The Sunfood Diet. I'm reading it right now and it's great. Also his Superfoods book talks about coconuts or coconut oil. Can't remember whether it's both or just one. He does say the thai's are the best.
